Bow down to the BlackGoddess! especially you, luigi!
That depends on what is considered easy... The two main ways I can think of to do such a thing, are either download a psf plugin for probably winamp, and whatever ps2 game music rips that you want, and have already been ripped. But there's also the possibility that with a specific program, you could rip the music yourself (if you've got a dvd-rom drive)...
I'm being lazy, so a basic description of psf files and how to make them into something that can be put on a cd, is here:

The other way, and this is the if nothing else works sort of thing. Is to run the stereo output of a ps2 through the line in jack on a computer. And then record the music directly out of the game. For this, a stereo RCA-to-1/8" miniplug adaptor might be needed... I don't know a whole lot about recording using easily availible software through line in, but I know winamp can do it.
JetAudio is best for Recording music you can get it at www.jetaudio.com
It is also the best free CD Burning Program Ever.
if you have a ps2, a good computer, a images of the game you want, and an on screen sound recorder, you can use pscx2 to record the music
i wanted to add that there is a program called cubemedia2,it can filter the music from your ps2 disc also videos.
here is the link:

it doesnt work everytime, perhaps you are lucky![]()
Do you also need a computer with dvd drive?
Most ps2 games are on dvd, so that's very likely...
LMZ I have a Q.
I know you can rip music/images/watch str files, from PSX games by using the tools on Zophar, but is it possible to do the same on PS2 games, would those same tools apply if you had a dvd drive, or would I need an whole diff. kind of ripper/player?
You'd probably need the ps2 tools from Zophar. Which are here in case anybody's wondering:

i have a friend who has entirely too much video game music. she has downloaded 50% of it and uses the aforementioned technique to 'rip' the music. her name is pieness.
oddly enough, she makes video game music, about video games, for gamers.
or so her caption read.
